I have always been a massive fan of biryani recipes, and I guess it is very clear in my blog. If you notice, I have posted a wide variety of biryani recipes in my blog, of which dum-style cooked biriyani is preferred. The most liked biriyani is dum-style cooked, so I am posting another recipe for veg paneer dum biryani. I have also posted quite a few biriyani without cooking in a dum style. For example, the instant biriyani recipe. It is pan-cooked rice with vegetables and biryani masala. You can make paneer biryani with pan-style cooking. However, I feel you will get better results with this cooking method.

Before concluding, here are some tips, suggestions and variations for a perfect paneer biryani recipe. Firstly, I always recommend using fresh, homemade full-cream paneer cubes for any paneer-based recipes. Even this recipe is no exception. You can use store-bought paneer, but keep an eye on the expiry date. Secondly, I have not added any vegetables, and I recommend keeping just capsicum and onions. However, you can still experiment with other veggies like potatoes, carrots and mushrooms. Lastly, the recipe tastes better when it is slow-cooked and rested. Hence, if you are planning for lunch, make it overnight and serve it the next day.

This straightforward flavoured rice recipe is prepared with spices, herbs, vegetables, paneer, and basmati rice. Paneer Biriyani or Veg Dum Paneer Biriyani is a popular and flavoured meat alternative biriyani. It is not only appreciated by vegetarians but also has a huge fan following among meat eaters. The creaminess and richness of paneer, when combined with spicy biriyani gravy, makes it a lethal combination.

Across India, a simple Paneer biryani recipe is prepared in many ways. The most common way is to make a dum-style biryani with paneer added to the biryani gravy. Later, rice is layered on top of it for dum cooking. The other way is to make the biriyani in a pressure cooker or a cooking pot. In addition, the same biriyani can be made with grated paneer added to the biryani gravy. Further, you can add other hero ingredients like potato, soya or even meat with paneer.

  • Firslty, in a bowl take 1 cup curd. Add 2 tbsp biryani masala, ¼ tsp turmeric, ½ tsp chilli powder, 1 tsp salt, 1 tsp ginger garlic.

  • Also, add 2 tbsp mint, 2 tbsp coriander and mix well.

  • Add in ½ carrot, 5 beans, 5 florets cauliflower and 3 tbsp peas.

  • Mix well, making sure everything is well combined. Marnate for 30 minutes.

  • To cook the rice, in a large vessel, take enough water, add spices and 3 chilli. Get the water to boil.

  • Now add 1½ cup basmati rice, 1 tsp ghee and 2 tsp lemon juice.

  • Boil for 5 minutes or until the rice is 80% cooked.

  • Drain off the rice and keep aside.

  • In a large kadai, heat 2 tbsp ghee. Fry 2 tbsp cashew, 2 tbsp raisins and 20 cubes paneer.

  • Fry till the paneer turns golden brown. Keep aside.

  • Add 2 tbsp oil and saute the spices till they turn aromatic.

  • Also, saute 1 onion till it turns golden brown.

  • Add in ½ capsicum and saute slightly.

  • Now add marinated vegetables and cook well. Cook till the vegetables are almost cooked.

  • Add a handful of coriander, a handful of mint, 2 tbsp of fried onion, and half of the paneer and cashews.

  • Now, layer with 80% cooked rice.

  • Also, top with coriander, mint, fried onion, and the remaining of the paneer and cashews.

  • Also, sprinkle biryani masala, and pour 1 cup of saffron milk.

  • Cover and simmer for 20 minutes, or until the rice is cooked well.

  • Finally, enjoy Paneer Biryani Recipe with raita.
